Method

  1. Prepare the spring onion by finely slicing it, then set aside the crispy fried onions.
  2. Heat a non-stick frying pan over a medium-high heat and add the extra virgin olive oil.
  3. Crack the eggs directly into the pan, being careful not to break the yolks.
  4. Fry the eggs for 2-3 minutes for a runny yolk, or longer for a firmer cook, until the whites are set and the edges are lightly crispy.
  5. Carefully remove the fried eggs from the pan and place them onto the slices of toast.
  6. Season immediately with fine salt and freshly ground black pepper.
