- 3.5 oz (100g) fresh spinach
- Salt and freshly ground black pepper, to taste

Method
- Heat the oil in a large heavy-bottomed pan or Dutch oven over a medium heat. Add the black mustard seeds and curry leaves; cook for 30-60 seconds until the seeds begin to pop.
