Method

  1. Bring a large pot of generously salted water to a rolling boil.
  2. Meanwhile, wash and halve the cherry tomatoes, then finely chop the garlic clove.
  3. Heat the extra virgin olive oil in a non-stick frying pan over a medium heat. Add the chopped garlic and sauté for approximately 30 seconds, being careful not to burn it.
  4. Add the halved cherry tomatoes to the pan and sauté for 3-4 minutes, until they begin to soften slightly. Season with salt and pepper to your liking.
  5. Cook the gnocchi in the boiling water. They will be ready once they float to the surface, usually in 2-3 minutes. Carefully drain them with a slotted spoon and transfer directly into the frying pan with the tomatoes.
  6. Add the Genovese pesto to the pan and gently toss to combine all the ingredients, ensuring the gnocchi are thoroughly coated.
  7. Serve immediately, garnished with grated Parmesan Reggiano and fresh basil leaves.

Serve the gnocchi piping hot, immediately after preparation, to best appreciate their texture and fresh flavours.
