  • 2 medium courgettes, finely chopped

Method

  1. In a 9-10 inch (24-26 cm) non-stick frying pan, heat the olive oil over a medium heat. Add the finely chopped onion and sauté for 3-4 minutes until translucent.
  2. Add the finely chopped courgettes and cook for another 5-7 minutes, stirring occasionally, until slightly softened and they have released some of their water.
  3. Stir in the diced cooked ham and cook for 2 minutes, mixing well with the vegetables. Remove the pan from the heat and allow the mixture to cool slightly.
  4. Meanwhile, in a large bowl, whisk the eggs with a whisk or fork until frothy. Stir in the grated Parmesan Reggiano, a generous pinch of fine salt, and freshly ground black pepper.
  5. Pour the cooled courgette and ham mixture into the bowl with the beaten eggs and mix well to combine all the ingredients.
  6. Reheat the same frying pan over a medium-low heat. Pour the egg and vegetable mixture evenly into the pan. Cook with a lid on for 10-12 minutes, or until the edges are set and the surface is almost completely cooked through.
  7. To finish cooking, you can either bake the frittata for 2-3 minutes under a preheated grill (if your pan is oven-safe) or, with the help of a plate, carefully flip it over to cook the other side for another 2-3 minutes. Serve hot or at room temperature.
