Quick Overview
- Preparation Time: 10 minutes
- Cooking Time: 15 minutes
- Difficulty: Easy
- Serves: 4
Ingredients
- 14.1 oz (400g) fresh runner beans
- 7.1 oz (200g) cherry tomatoes
- 2 cloves garlic
- 3 tablespoons extra virgin olive oil
- A pinch of chilli (optional)
- Fine salt, to taste
- Freshly ground black pepper, to taste
- A few fresh basil leaves, to garnish
Method
- Top and tail the runner beans, discarding the ends, then wash them thoroughly under running water. Halve the cherry tomatoes and finely chop the garlic cloves.
- Heat the extra virgin olive oil in a large non-stick frying pan over a medium heat. Add the chopped garlic and the chilli (if using), allowing them to sizzle for about 1 minute until the garlic is lightly golden.
- Add the runner beans to the pan. Pour in a couple of tablespoons of water, cover with a lid, and cook for 8-10 minutes, or until the runner beans are tender but still slightly crunchy.
- Stir in the halved cherry tomatoes, mix gently, and continue cooking without the lid for another 5-7 minutes, allowing the cherry tomatoes to soften and release their juices.
- Season with salt and pepper to your taste. Turn off the heat and tear the fresh basil leaves by hand before stirring them through.
Serving & Leftovers
Serve the sautéed runner beans immediately as a warm or tepid side dish. They are excellent alongside white meats, fish, or as part of a light vegetarian meal. Any leftovers can be stored in an airtight container in the fridge for up to 2 days and reheated gently in a frying pan or microwave.
