Method

  1. Bring a large pot of salted water to a rolling boil. Add the pasta and cook according to package instructions until al dente.
  2. While the pasta cooks, wash and finely slice the courgettes, preferably into thin rounds or julienne strips.
  3. In a non-stick frying pan, heat the olive oil over a medium flame. Add the minced garlic clove and gently sauté for about one minute, being careful not to burn it.
  4. Stir the sliced courgettes into the pan and sauté for 5-7 minutes, stirring frequently, until they become tender but still retain a slight bite. Season with salt and pepper.
  5. Before draining the pasta, reserve approximately 4 fl oz (120ml) of its cooking water. Drain the pasta and transfer it directly into the frying pan with the courgettes. Add the stracchino cheese, broken into pieces, and a couple of tablespoons of the reserved pasta water. Stir vigorously until the stracchino has completely melted, creating a luscious, creamy sauce that coats the pasta. Add more pasta water if needed to achieve your desired consistency.
  6. Serve immediately, garnished with fresh basil, if available.
