  • 5.3 oz (150g) gluten-free oat flakes
  • 4.2 oz (120g) pitted Medjool dates
  • 1.1 oz (30g) sunflower seeds
  • 1.1 oz (30g) pumpkin seeds
  • 2 tbsp sunflower seed butter (tahini or any seed butter will work)
  • 2 tbsp maple syrup or agave syrup
  • 1 tsp vanilla extract
  • 1 pinch fine salt
  • 2-3 tbsp water (only if necessary)

Method

  1. Line an 8×8 inch (20x20cm) square baking tin with baking parchment, leaving the edges overhanging to make it easy to remove later.
  2. Combine the oat flakes, pitted dates, sunflower seeds, pumpkin seeds, sunflower seed butter, maple syrup, vanilla extract, and salt in a food processor.
  3. Process for 2-3 minutes, or until the mixture begins to clump together. If it’s too dry, add a tablespoon of water at a time and continue to process until a sticky consistency is achieved.
  4. Transfer the mixture to the prepared baking tin. Use a spatula or the back of a spoon to press it down evenly and firmly, creating a compact layer.
  5. Place the tin in the freezer for at least 10 minutes to allow the bars to set quickly before cutting.

Serving & Leftovers

Once firm, remove the tin from the freezer and lift the mixture out using the baking parchment. Cut into 8-10 bars. Store the bars in an airtight container in the fridge for up to 7 days or in the freezer for up to one month. They are perfect for grabbing on the go for an energy-boosting snack.
