Quick Avocado Pasta with Asparagus and Courgette

This recipe is crafted for those evenings when time is precious, yet you refuse to compromise on a fresh, nutritious meal. Integrating elements like avocado, asparagus, and courgette into one speedy preparation is a clever way to manage your weekly ingredients, transforming meal planning into a delicious, stress-free dish. The approach is wonderfully simple: as the pasta cooks, the vegetables are prepared, and the creamy avocado sauce is blended in mere moments. It’s a tangible example of how good organisation and fresh ingredients can result in a fulfilling dinner, without demanding long hours in the kitchen. A meal perfectly suited to a dynamic lifestyle, offering both flavour and lightness.

Quick Overview

  • Preparation Time: 10 minutes
  • Cooking Time: 15 minutes
  • Difficulty: Easy
  • Serves: 2

Ingredients

  • 7 oz (200g) short pasta (e.g., fusilli, penne)
  • 1 ripe avocado
  • 5.3 oz (150g) asparagus, trimmed and sliced into rounds
  • 1 small courgette, cut into julienne strips or thin half-moons
  • 1 clove garlic, finely chopped
  • Juice of 1/2 lemon and grated zest
  • 2 tbsp (30ml) extra virgin olive oil
  • Salt and freshly ground black pepper, to taste
  • Parmigiano Reggiano or Pecorino cheese, grated, to serve (optional)

Method

  1. Bring a large pot of salted water to a boil; cook the pasta according to package instructions, draining it al dente and reserving approximately 4 fl oz (120ml) of the pasta water.
  2. While the pasta cooks, heat 1 tbsp (15ml) of olive oil in a large frying pan over a medium heat; add the chopped garlic and sauté for 30 seconds until fragrant.
  3. Add the asparagus and courgette to the pan, cooking for 5-7 minutes, stirring occasionally, until tender yet still crisp.
  4. Meanwhile, prepare the sauce: combine the avocado flesh, lemon juice, a pinch of salt, pepper, and 1 tbsp (15ml) of olive oil in a blender; blend until smooth and creamy.
  5. Drain the pasta and transfer it directly to the frying pan with the cooked vegetables; add the avocado cream and mix well, adding a little of the reserved pasta cooking water if necessary to achieve the desired consistency.
  6. Serve immediately, garnished with grated lemon zest and, if desired, a sprinkle of Parmigiano or Pecorino cheese.

Serving & Leftovers

This pasta is best enjoyed warm, immediately after preparation, to fully savour the avocado’s creaminess and the vegetables’ freshness. Any leftovers can be stored in an airtight container in the fridge for up to one day, though the avocado sauce tends to oxidise and change colour. It’s truly best consumed fresh.
