Quick Overview

  • Preparation Time: 15 minutes
  • Cooking Time: 12-15 minutes
  • Difficulty: Easy
  • Serves: 6-8 knots

Ingredients

  • For the Dough (5 minutes):
    • 7.1 oz (200g) plain flour
    • 1.8 oz (50g) caster sugar
    • 1½ teaspoons baking powder
    • A pinch of salt
    • 1.8 oz (50g) cold butter, cubed
    • 2.7 fl oz (80ml) whole milk (or plant-based drink)
  • For the Chocolate Filling (1 minute):
    • 1.1 oz (30g) unsweetened cocoa powder
    • 1.8 oz (50g) caster sugar
    • 1.1 oz (30g) melted butter
  • For the Icing (1 minute):
    • 1.8 oz (50g) icing sugar
    • 1-2 teaspoons milk

Method

  1. Preheat your oven to 190°C (170°C fan/Gas Mark 5) and line a baking tray with baking paper. In a large bowl, combine the plain flour, caster sugar, baking powder, and salt.
  2. Add the cold, cubed butter and rub it into the dry ingredients with your fingertips until the mixture resembles breadcrumbs. Pour in the milk and briefly knead by hand, just enough to form a soft, smooth dough.
  3. On a lightly floured surface, roll out the dough with a rolling pin into a rectangle measuring approximately 12 x 8 inches (30 x 20cm). In a small bowl, mix together the cocoa powder, the filling’s caster sugar, and the melted butter until you have a spreadable paste.
  4. Evenly spread the chocolate paste over the dough rectangle. Roll up the dough tightly from the long side to create a cylinder. Using a sharp knife, cut the cylinder in half lengthwise, exposing the chocolate layers.
  5. Plait the two strips together, keeping the cut sides facing upwards, then form them into knots. Arrange the knots on the prepared baking tray and bake for 12-15 minutes, or until lightly golden and cooked through.
  6. While the knots are baking, prepare the icing by mixing the icing sugar with the milk until you achieve a smooth yet thick consistency. Remove the knots from the oven, let them cool slightly, and then brush with the icing before serving.

Serving & Leftovers

Serve the knots warm to best appreciate their softness and chocolatey centre. They can be stored at room temperature in an airtight container for 1-2 days. For reheating, a quick burst in the microwave will make them soft again.
