Ingredients

  • 5.3 oz (150g) digestive biscuits
  • 2.1 oz (60g) melted butter

Method

  1. Prepare the base: Whizz the digestive biscuits in a food processor until finely crushed. Combine with the melted butter and mix thoroughly. Press the mixture firmly into the bottom of 4 individual glasses or dessert bowls. Place in the freezer for 10 minutes.
  2. Make the dark chocolate ganache: Melt the chopped dark chocolate with 1.8 fl oz (50ml) of fresh double cream in a small saucepan over a low heat or in the microwave, stirring until smooth. Allow to cool slightly.
  3. Infuse the chilli cream: Finely chop the chilli (removing the seeds for a milder heat). Gently heat 1.8 fl oz (50ml) of fresh double cream with the chopped chilli, ensuring it doesn’t boil. Leave to infuse for 5 minutes, then strain to remove the chilli.
  4. Create the white chocolate mousse: Melt the chopped white chocolate. Whisk the remaining 5.3 fl oz (150ml) of very cold fresh double cream until soft peaks form. Gently fold the melted, lukewarm white chocolate into the whipped cream, then add the mascarpone and the strained chilli-infused cream. Mix carefully with a spatula, using an upward motion.
  5. Assemble the dessert: Pour a layer of the dark chocolate ganache over the chilled biscuit base. Follow with a generous layer of the white chocolate and chilli mousse. Gently level the top.
  6. Rapid chilling and serving: Place the glasses in the refrigerator for at least 10 minutes, or in the freezer for 5 minutes, to allow the flavours and texture to set. Serve immediately or keep chilled in the fridge.
