Quick Overview

  • Preparation Time: 10 minutes
  • Cooking Time: 18 minutes
  • Difficulty: Easy
  • Serves: 2

Ingredients

  • 14 oz (400g) chicken breast, cut into 1-inch (2cm) cubes
  • 2 medium courgettes, thinly sliced into half-moons
  • 7 oz (200g) cherry tomatoes, halved
  • 1 can (14 oz / 400g) pre-cooked chickpeas, drained and rinsed
  • 2 cloves garlic, finely minced
  • 2 tbsp extra virgin olive oil
  • 1 tsp dried oregano (or Mediterranean herb mix)
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped, to garnish (optional)

Method

  1. In a large frying pan, heat the extra virgin olive oil over a medium-high heat. Once hot, add the chicken breast cubes and season generously with salt and pepper.
  2. Cook the chicken for 5-7 minutes, stirring occasionally, until it’s golden brown on all sides and thoroughly cooked through. Once ready, transfer the chicken to a plate and set aside.
  3. Into the same frying pan, add the courgette half-moons and the minced garlic. Cook for approximately 4-5 minutes, stirring regularly, until the courgettes begin to soften slightly.
  4. At this point, stir in the halved cherry tomatoes and the drained chickpeas. Continue cooking for another 3-4 minutes, just long enough for the tomatoes to soften a little and the flavours to meld together.
  5. Reintroduce the cooked chicken to the pan with the vegetables. Add the dried oregano and mix well to combine all the ingredients thoroughly. Check the seasoning and adjust with salt and pepper if necessary.
  6. Serve immediately, garnishing with fresh chopped parsley if desired, for a final touch of colour and freshness.

Serving & Leftovers

This dish is delightful served hot, perhaps alongside a slice of wholemeal bread or a light green salad. Leftovers will keep well in an airtight container in the fridge for 2-3 days. Gently reheat in a frying pan or microwave until piping hot.
