Galbi Express: Korean Short Ribs Ready in 30 Minutes

Korean short ribs, or Galbi, are a much-loved dish, celebrated for their rich flavour and incredibly tender meat. Traditionally, they demand hours of marinating, but we’ve ingeniously adapted this recipe to deliver all the authentic taste in under half an hour. The secret lies in utilising thin-cut beef short ribs, which cook rapidly, combined with a swift marinade that transforms into a glorious, savoury glaze directly in the pan. This efficient approach maximises flavour without any time compromise, making Galbi a realistic option even on your most frantic evenings. With approximately 15 minutes of active prep and another 15 minutes of cooking, you can bring an exotic and deeply satisfying meal to the table. It’s the perfect way to infuse your weekly culinary repertoire with an international flair, guaranteeing a delicious and utterly stress-free result.

Quick Overview

  • Preparation Time: 15 minutes
  • Cooking Time: 15 minutes
  • Difficulty: Easy
  • Serves: 2-3

Ingredients

  • 17.6 oz (500g) thin-cut beef short ribs (approx. 0.2-0.4 inch / 0.5-1 cm thick)
  • ½ Asian pear (or ripe common pear), peeled and chopped
  • ¼ small onion, chopped
  • 2 cloves garlic
  • 0.4 inch (1cm) fresh ginger, peeled and minced
  • 2 fl oz (60ml) low-sodium soy sauce
  • 2 tbsp light brown sugar
  • 1 tbsp honey
  • 1 tbsp toasted sesame oil
  • 1 tbsp rice vinegar
  • ½ tsp ground black pepper
  • 1 tbsp vegetable oil (for cooking)
  • 2 spring onions, finely sliced (for garnish)
  • Toasted sesame seeds (for garnish, optional)

Method

  1. Prepare the Marinade: In a blender, combine the pear, onion, garlic, ginger, soy sauce, light brown sugar, honey, sesame oil, rice vinegar, and black pepper. Blend until you achieve a smooth, homogenous mixture.
  2. Prepare the Ribs: Pat the short ribs dry with kitchen paper to remove any excess moisture. If your ribs are slightly thicker, you can gently pound them with a meat tenderiser to thin them out.
  3. Cook the Ribs: Heat one tablespoon of vegetable oil in a large frying pan over medium-high heat. Cook the ribs in a single layer, working in batches if necessary, for 2-3 minutes per side, until well browned. Remove the ribs from the pan and set aside.
  4. Glaze the Meat: Reduce the heat to medium. Pour the blended marinade into the same pan. Bring to a simmer and allow it to reduce, stirring occasionally, for 3-5 minutes until the sauce has slightly thickened.
  5. Combine and Serve: Return the short ribs to the pan with the sauce, ensuring they are thoroughly coated. Allow them to cook for a further 1-2 minutes, stirring gently, to heat the meat through and let it absorb the rich flavour.
  6. Garnish and Enjoy: Serve immediately, garnished with finely sliced spring onions and toasted sesame seeds.

Serving & Leftovers

Galbi short ribs are superb served with steamed rice and fresh lettuce leaves for wrapping the meat, creating a delightful Korean ‘ssam’. Any leftovers can be stored in an airtight container in the refrigerator for up to 2-3 days. To reheat, use a frying pan over medium heat or a microwave, adding a splash of water if the sauce has thickened too much.
