Ingredients
- 7 oz (200g) lean beef mince
- 1/2 small onion, finely chopped
- 1 clove garlic, minced
- 1 tbsp tomato purée
- 3.5 fl oz (100ml) beef stock (or vegetable stock)
- 5.3 oz (150g) mozzarella (or smoked provola), grated
- 2 Romagna piadine
- 2 tbsp extra virgin olive oil

- 1/2 tsp dried oregano
- A pinch of chilli powder (optional)
Method
- Heat 1 tbsp olive oil in a large frying pan over a medium heat. Add the finely chopped onion and sauté for 2-3 minutes until translucent.
- Stir in the minced garlic and lean beef mince. Brown the meat, breaking it up with a spatula, for about 5-7 minutes until well browned. Drain any excess fat.
- Stir in the tomato purée, dried oregano, chilli powder (if using), salt, and pepper. Mix well for one minute, then pour in the beef stock. Simmer for 5-7 minutes, or until the liquid has slightly reduced and the filling is flavourful.
- While the filling is cooking, gently heat the remaining beef stock in a small saucepan. Add a pinch of dried oregano and a pinch of salt and pepper. Keep warm for dipping.
- Heat the remaining 1 tbsp olive oil in the same pan (cleaned, if necessary, or in another non-stick frying pan) over a medium heat. Place one piadina in the pan and spread half of the beef filling over one half of the piadina. Top with half of the grated mozzarella.
- Fold the piadina in half to form a crescent shape and press gently. Cook for 2-3 minutes per side, until the piadina is golden brown and crispy, and the cheese is melted. Repeat with the second piadina.
