Method

  1. Heat the vegetable oil in a medium saucepan over a medium-high heat. Add the diced chicken and cook for 3-4 minutes, turning occasionally, until golden brown on all sides.
  2. Stir in the yellow curry paste, garlic, grated ginger, and sliced lemongrass. Cook for about 1 minute, stirring constantly, until aromatic.
  3. Pour the chicken or vegetable broth and coconut milk into the saucepan. Bring to a boil, then reduce the heat and simmer for 8-10 minutes, allowing the flavours to meld.
  4. While the broth simmers, cook the rice noodles according to package instructions (usually 3-5 minutes in hot water or directly in the simmering broth during the last few minutes).
  5. Remove from the heat, add the fresh spinach to the hot broth and stir gently until wilted, which takes about 1 minute. If using fish sauce, add it now.
  6. Divide the cooked noodles between two bowls. Ladle the hot broth with the chicken and spinach over the noodles. Garnish with a lime wedge and fresh coriander, if desired, and serve immediately.
