Ingredients

  • 14 oz (400g) turkey mince
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 7 fl oz (200ml) passata (sieved tomatoes)
  • 2 tbsp taco seasoning mix (or 1 tsp sweet paprika, 1 tsp cumin, 1/2 tsp dried oregano, pinch of chilli powder)
  • 12 small corn or wheat tortillas
  • 3.5 oz (100g) lettuce, shredded
  • 1 medium tomato, diced
  • 2.8 oz (80g) grated cheese (such as Edam or Cheddar)
  • 2 tbsp olive oil
  • Salt and freshly ground black pepper, to taste
  • Sour cream or Greek yoghurt, to serve (optional)

Method

  1. In a large frying pan, heat the olive oil over a medium heat. Add the finely chopped onion and cook for 3-4 minutes until it becomes soft and translucent.
  2. Stir in the minced garlic and cook for another minute until fragrant, being careful not to burn it.
  3. Add the turkey mince to the pan. Break it up with a wooden spoon and cook for 5-7 minutes, stirring frequently, until it’s completely browned and no longer pink. Drain any excess fat.
  4. Stir in the taco seasoning mix and the passata. Mix well, then bring to a gentle simmer. Reduce the heat and let it gently bubble for 5-7 minutes, allowing the flavours to meld and the sauce to thicken slightly. Season with salt and pepper to taste.
  5. Meanwhile, warm the tortillas. You can do this in a dry frying pan for about 30 seconds per side, in the microwave for 15-20 seconds, or in an oven at 180°C (Gas Mark 4) for 2-3 minutes, wrapped in foil.
  6. Serve the hot turkey filling in the warm tortillas, garnishing with fresh shredded lettuce, diced tomato, grated cheese and, if desired, a dollop of sour cream or Greek yoghurt.

Serving & Leftovers

Tacos are best assembled and enjoyed immediately. The turkey filling can be prepared in advance and stored in an airtight container in the fridge for up to 3 days. Reheat gently before serving and assemble with fresh toppings at the last minute.
