Quick Overview

  • Preparation Time: 10 minutes
  • Cooking Time: 18-20 minutes
  • Difficulty: Easy
  • Serves: 2

Ingredients

  • 2 tbsp (30ml) olive oil
  • 8.8 oz (250g) chicken breast, cut into thin strips or small cubes
  • 1 clove garlic, finely minced
  • ½ – 1 tsp (2.5-5g) chilli powder or flakes (to taste)
  • 1 tsp (5g) smoked sweet paprika
  • 3.4 fl oz (100ml) passata
  • 1 tbsp (15ml) white wine vinegar
  • ½ tsp (2.5g) sugar (or honey)
  • 1.7 fl oz (50ml) hot vegetable stock
  • 2 ciabatta rolls or similar
  • Fresh lettuce, to serve
  • Mayonnaise (optional, to serve)
  • Salt and black pepper to taste

Method

  1. Prepare the chicken: Cut the chicken breast into thin strips or small cubes for quicker cooking. Lightly season with salt and pepper.
  2. Start the sauce: Heat the olive oil in a large frying pan over a medium-high heat. Add the minced garlic and chilli, frying for about 1 minute until the garlic is fragrant.
  3. Cook the chicken: Add the chicken to the pan and brown for 3-4 minutes, stirring, until it’s no longer pink on the outside.
  4. Create the sauce: Stir in the passata, smoked paprika, white wine vinegar, sugar, and hot vegetable stock. Mix well and bring to a gentle simmer.
  5. Shred and flavour: Reduce the heat to its lowest setting, cover, and cook for 8-10 minutes, stirring occasionally. Using two forks, shred the chicken directly into the sauce as it cooks, allowing it to absorb all the delicious flavours.
  6. Assemble the sandwiches: Meanwhile, lightly toast the rolls. Fill the base with fresh lettuce and, if desired, a layer of mayonnaise. Then, add plenty of the spicy pulled chicken and cover with the other half of the roll. Serve immediately.

Serving & Leftovers

Serve the sandwiches hot, perhaps with a side of crisp green salad or some chips. Any leftover pulled chicken can be stored in an airtight container in the fridge for 2-3 days. Reheat gently in a pan or microwave before serving, adding a tablespoon of water if the sauce has thickened too much.
