  • 14.1 oz (400g) Italian sausage (sweet or spicy), cut into pieces or left whole
  • 2 tbsp (30ml) extra virgin olive oil
  • 2 medium bell peppers (red and yellow), cored and sliced

  • 2 cloves garlic, finely minced
  • 14.1 oz (400g) passata (or crushed tinned tomatoes)
  • 3.4 fl oz (100ml) vegetable stock or water
  • Salt and freshly ground black pepper, to taste
  • A pinch of chilli flakes (optional)
  • Fresh basil for garnishing

Method

  1. In a large, non-stick frying pan, heat the olive oil over a medium-high heat. Add the sausage and brown it evenly for 5-7 minutes, until beautifully golden on all sides. Remove the sausage from the pan and set aside.
  2. In the same pan, add the sliced bell peppers and onion. Sauté for 5-7 minutes, stirring occasionally, until they begin to soften and take on a little colour.
  3. Stir in the minced garlic and chilli flakes (if using), cooking for another minute until fragrant. Be careful not to let the garlic burn.
  4. Pour the passata and vegetable stock (or water) into the pan. Bring to a gentle simmer and season generously with salt and pepper.
  5. Return the browned sausage to the sauce with the vegetables. Reduce the heat to low, cover, and let it simmer for 7-10 minutes, allowing the flavours to meld together beautifully.
  6. Stir gently and garnish with plenty of fresh basil before serving immediately.
