Designed for efficiency, it requires no lengthy prep or complex steps, ensuring a nutritious dish is ready from start to table in approximately 30 minutes. The secret lies in the simplicity of the ingredients, combined with an efficient cooking method that truly amplifies their natural tastes. Exceptionally versatile, this dish serves as a perfect accompaniment to a wide array of main courses, from delicate fish to hearty meats, or can be enjoyed on its own as a light and satisfying meal.

Quick Overview

  • Preparation Time: 8-10 minutes
  • Cooking Time: 15-18 minutes
  • Difficulty: Easy
  • Serves: 2-4

Ingredients

  • 2 medium courgettes
  • 1 bell pepper (yellow or red)
  • 5.3 oz (150g) cherry tomatoes
  • 1/2 small red onion
  • 2 cloves garlic
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon dried mixed herbs (rosemary, thyme, oregano)
  • Fine salt, to taste
  • Freshly ground black pepper, to taste

Method

  1. Preheat the oven to 200°C (180°C fan/Gas Mark 6) and line a large baking tray with baking parchment.
  2. Wash the courgettes, bell pepper, and cherry tomatoes. Slice the courgettes into half-moons, the bell pepper into strips, and halve the cherry tomatoes. Peel and thinly slice the red onion, then mince the garlic cloves.
  3. In a large bowl, combine all the chopped vegetables, onion, and garlic. Add the extra virgin olive oil, dried mixed herbs, salt, and pepper. Mix thoroughly to ensure all the vegetables are evenly coated.
  4. Spread the seasoned vegetables in a single layer on the prepared baking tray. It’s crucial not to overcrowd the tray to promote even cooking and a slight browning.
  5. Bake for 15-18 minutes. Halfway through cooking, gently turn the vegetables with a spatula to ensure they cook evenly on all sides. The vegetables should be tender and lightly caramelised at the edges. Remove from the oven and serve immediately.

Serving & Leftovers

This side dish is best served warm, straight from the oven. It pairs beautifully with white meat dishes, fish, or legumes. Any leftovers can be stored in an airtight container in the fridge for 2-3 days and gently reheated in a pan or microwave.
