Quick Ravioli Lasagna: A Speedy 30-Minute Dinner

Weeknight evenings demand practical and delicious solutions. This speedy ravioli lasagna recipe is crafted to deliver a complete and comforting meal without lengthy preparations. By utilising frozen ravioli, we eliminate the need for boiling pasta and preparing a separate cheese filling, significantly reducing both cooking and assembly times. The result is a rich, layered dish brimming with a flavourful sausage sauce and gooey melted cheese, ready to be savoured in under half an hour. This approach ensures a satisfying outcome with minimal effort. It’s the ideal solution when time is short, but the craving for a genuine and fulfilling dish is strong, making it an instant classic for your weekly repertoire.

Quick Overview

  • Preparation Time: 10 minutes
  • Cooking Time: 20 minutes
  • Total Time: 30 minutes
  • Difficulty: Easy
  • Serves: 4

Ingredients

  • 14.1 oz (400g) frozen meat or ricotta and spinach ravioli
  • 10.5 oz (300g) minced sausage (casings removed)
  • 24.5 fl oz (700ml) passata (strained tomatoes)
  • 1 clove garlic (optional, finely chopped)
  • 5.3 oz (150g) fresh mozzarella, grated or cubed
  • 1.7 oz (50g) Parmesan cheese, grated
  • 2 tbsp olive oil
  • Salt and freshly ground black pepper, to taste
  • A pinch of dried oregano
  • Fresh basil leaves for garnishing (optional)

Method

  1. Preheat the oven to 200°C (390°F) fan-assisted and lightly grease a medium-sized baking dish (approx. 8×8 inches/20×20 cm).
  2. In a large frying pan, heat the olive oil over a medium heat. Add the minced sausage and cook, breaking up the pieces with a spatula, for about 5-7 minutes, or until well browned. Drain any excess fat.
  3. If using, add the finely chopped garlic to the sausage and cook for one minute until fragrant. Pour in the passata, add the dried oregano, salt, and pepper. Bring to a gentle simmer and let it cook for 5 minutes.
  4. Begin to assemble the lasagna. Spread a thin layer of sauce over the bottom of the baking dish. Arrange one-third of the frozen ravioli in a single layer over the sauce. Cover with another layer of sauce and half of the mozzarella and a little Parmesan.
  5. Repeat with another layer of ravioli, sauce, and the remaining mozzarella and Parmesan. Finish with the last third of the ravioli, the remaining sauce, and a generous sprinkle of Parmesan cheese.
  6. Bake for 15-18 minutes, or until the cheese is melted and bubbling, and the edges are lightly golden.
  7. Let it rest for a few minutes before serving and, if desired, garnish with fresh basil.

Serving & Leftovers

This speedy lasagna is best served hot directly from the oven. It pairs beautifully with a light green salad. Leftovers can be stored in an airtight container in the fridge for 2-3 days and gently reheated in the microwave or oven.
