Method

  1. Bring a large pan of salted water to the boil; add the pasta and cook according to package instructions, usually for 8-10 minutes, until al dente.
  2. Meanwhile, heat the extra virgin olive oil in a non-stick frying pan over a medium heat. Add the finely chopped shallot and gently sauté for 2-3 minutes until translucent.
  3. Add the diced pancetta to the frying pan with the shallot. Cook the pancetta for about 5-7 minutes, stirring occasionally, until golden and crispy.
  4. Stir the frozen peas into the pancetta and shallot mixture. Cook for 3-4 minutes, just long enough for the peas to be tender and thoroughly heated through. Turn off the heat.
  5. Drain the al dente pasta, reserving about half a cup of the cooking water. Immediately transfer the pasta to the frying pan with the pancetta and pea sauce.
  6. Add the chopped fresh mint leaves and, if needed, a couple of tablespoons of the reserved pasta cooking water to create a light, creamy sauce. Stir well to combine all ingredients and season with freshly ground black pepper.
