  • 2 medium courgettes

  • 2 cloves garlic
  • 4 tablespoons extra virgin olive oil
  • A bunch of fresh basil
  • Grated Parmesan Reggiano (optional)
  • Fine salt and freshly ground black pepper to taste

Method

  1. Bring a large pot of generously salted water to a rolling boil.
  2. Whilst the water is heating, wash and finely chop the courgettes into julienne strips or small cubes. Trim the woody ends from the asparagus, then slice the stalks into rounds, keeping the tips whole. Halve the cherry tomatoes.
  3. Add the pasta to the boiling water. During the final 3-4 minutes of the pasta’s cooking time, add the prepared asparagus and peas to the same pot.
  4. In a large frying pan, heat the olive oil over a medium flame. Add the finely chopped garlic and the halved cherry tomatoes, allowing them to sauté for approximately 5 minutes, or until they begin to soften.
  5. Drain the pasta and vegetables, making sure to reserve about a ladleful of the cooking water. Transfer the drained pasta and vegetables directly into the frying pan with the tomato and garlic sauté.
  6. Toss everything together thoroughly. If needed, add a little of the reserved pasta cooking water to create a light, creamy sauce. Turn off the heat, then stir in the freshly chopped basil and, if desired, the grated Parmesan Reggiano.
  7. Serve immediately, garnished with a grinding of fresh black pepper.
