Ingredients

  • 10.6 oz (300g) beef mince
  • 2 burger buns
  • 4 slices smoked or sweet provola cheese
  • 1.8 oz (50g) fresh rocket
  • 1 ripe tomato, sliced
  • 1/2 red onion, thinly sliced
  • 2 tablespoons extra virgin olive oil
  • Salt and freshly ground black pepper to taste

Method

  1. Begin by preparing the beef: divide the mince into two equal portions and form two flat patties, approximately 3/4 inch (2cm) thick. Season generously with salt and pepper on both sides.
  2. Heat a non-stick frying pan over a medium-high heat with the olive oil. Once hot, place the burgers in the pan and cook for 4-5 minutes per side for a medium doneness, or until your desired level of cooking is reached.
  3. During the last 2 minutes of the burgers’ cooking time, place two slices of provola cheese on top of each burger to allow it to melt. Simultaneously, halve the burger buns and lightly toast them in the same pan or a toaster.
  4. While the beef is cooking, slice the tomato and red onion. Gently wash and dry the fresh rocket leaves.
  5. Assemble the burgers: drizzle a little olive oil onto the toasted buns, then add the burger with the melted provola, followed by the tomato slices, red onion, and a generous handful of fresh rocket.

It is not advisable to store assembled burgers, as the fresh components may lose their texture.
