Method

  1. Bring a large pot of salted water to the boil. Cook the pasta according to packet instructions until al dente.
  2. Whilst the pasta cooks, heat the olive oil in a large frying pan over a medium heat. Add the diced pancetta and cook until golden and crispy, about 5-7 minutes. Remove the pancetta with a slotted spoon and set aside, leaving the fat in the pan.
  3. In the same pan, add the finely chopped onion and sauté for 3-4 minutes until translucent. Stir in the frozen peas and vegetable stock. Cook for 5 minutes, or until the peas are tender.
  4. Take about one-third of the cooked peas and lightly mash them directly in the pan with a fork, or coarsely blend them with a ladle of the pasta cooking water to create a creamy base. This step adds creaminess without the need for actual cream.
  5. Drain the pasta, reserving about 3.4 fl oz (100ml) of the cooking water. Transfer the pasta directly to the frying pan with the peas.
  6. Add the reserved crispy pancetta and the Parmigiano Reggiano. Stir vigorously, adding a little of the pasta cooking water, a tablespoon at a time, until you achieve a creamy sauce that coats the pasta beautifully.
  7. Taste and adjust for salt and pepper. Serve immediately with extra grated Parmigiano to your liking.
