Ingredients

  • 5.6 oz (160g) pearl barley (approx. 12 minutes cooking time)
  • 6.3 oz (180g) tinned tuna, drained
  • 5.3 oz (150g) cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1.8 oz (50g) pitted Taggiasche olives
  • 1.8 oz (50g) fresh rocket
  • 2 tbsp extra virgin olive oil
  • Juice of 1/2 lemon
  • Fine sea salt, to taste
  • Freshly ground black pepper, to taste

Method

  1. Bring a pan of salted water to a boil and cook the pearl barley according to package instructions, usually for about 12 minutes, until al dente.
  2. Whilst the barley is cooking, prepare the vegetables: halve the cherry tomatoes and dice the cucumber. Drain the tuna from its preserving oil.
  3. Prepare the dressing by emulsifying the extra virgin olive oil with the lemon juice, a pinch of fine sea salt, and a grind of black pepper in a small bowl.
  4. Once cooked, drain the pearl barley and transfer it to two individual bowls, distributing it evenly as the base.
  5. Arrange the drained tuna, cherry tomatoes, diced cucumber, Taggiasche olives, and rocket on top of the barley, creating distinct sections for an inviting appearance.
  6. Drizzle each bowl with the prepared dressing just before serving, stirring gently if desired.

Serving & Leftovers

This bowl is perfect served immediately, when the barley is still warm and the vegetables are fresh and crisp. If you have any leftovers, they can be stored in an airtight container in the fridge for up to one day. It also makes an ideal packed lunch, just keep the dressing separate and add it just before eating.
