- 1.8 oz (50g) fresh rocket
- 2 tbsp extra virgin olive oil
- Juice of 1/2 lemon
- Fine sea salt, to taste
- Freshly ground black pepper, to taste
Method
- Bring a pan of salted water to a boil and cook the pearl barley according to package instructions, usually for about 12 minutes, until al dente.
- Whilst the barley is cooking, prepare the vegetables: halve the cherry tomatoes and dice the cucumber. Drain the tuna from its preserving oil.
- Prepare the dressing by emulsifying the extra virgin olive oil with the lemon juice, a pinch of fine sea salt, and a grind of black pepper in a small bowl.
- Once cooked, drain the pearl barley and transfer it to two individual bowls, distributing it evenly as the base.
