Method
- In a non-stick frying pan, heat the olive oil over a medium flame. Add the finely chopped courgette, red pepper, onion, and garlic. Cook for 5-6 minutes, stirring occasionally, until the vegetables have softened slightly. Remove from the heat and allow to cool for a couple of minutes.
- Meanwhile, in a large bowl, combine the minced chicken, salt, black pepper, smoked paprika, egg, breadcrumbs, and grated Gruyère cheese.
