Quick Overview

  • Preparation Time: 10 minutes
  • Cooking Time: 18 minutes
  • Difficulty: Easy
  • Serves: 4

Ingredients

  • 17.6 oz (500g) chicken breast, diced into 2-3 cm cubes
  • 5.3 oz (150g) full-fat Greek yoghurt
  • 1 medium onion, finely chopped
  • 2 cloves garlic, crushed or garlic paste
  • A 0.8 inch (2cm) piece of fresh ginger, grated or ginger paste
  • 14.1 oz (400g) tinned chopped tomatoes
  • 3.4 fl oz (100ml) single cream (or cooking cream)
  • 1 teaspoon ground turmeric
  • 1 teaspoon chilli powder (or sweet paprika for a milder flavour)
  • 2 teaspoons garam masala
  • 1 fl oz (2 tablespoons) vegetable oil
  • Salt and freshly ground black pepper, to taste
  • Fresh chopped parsley, to garnish (optional)

Method

  1. In a bowl, combine the diced chicken with the Greek yoghurt, half of the crushed garlic, half of the grated ginger, ground turmeric, chilli powder, 1 teaspoon of garam masala, salt, and pepper. Mix well and set aside to marinate for at least 10 minutes while you prepare the other ingredients.
  2. Heat the vegetable oil in a large, non-stick frying pan over a medium-high heat. Add the marinated chicken and cook for 5-7 minutes, turning frequently, until golden brown on all sides. Remove the chicken from the pan and set it aside.
  3. In the same pan, add the finely chopped onion and sauté for approximately 3-4 minutes, until it’s softened and translucent.
  4. Stir in the remaining garlic and ginger, along with the remaining 1 teaspoon of garam masala. Cook for 1 minute, stirring constantly, until fragrant.
  5. Add the tinned chopped tomatoes to the pan. Bring to a boil, then reduce the heat and let it simmer gently for 5 minutes, stirring occasionally.
  6. Return the cooked chicken to the pan with the sauce. Fold in the single cream and mix gently. Continue to simmer for another 3-4 minutes, or until the chicken is thoroughly cooked through and the sauce has slightly thickened.
  7. Taste and adjust the seasoning with salt and pepper if necessary.

Serving & Leftovers

Serve your Chicken Tikka Masala immediately, piping hot, garnished with fresh chopped parsley if desired. It pairs beautifully with fluffy Basmati rice or warm naan bread. Leftovers can be stored in an airtight container in the fridge for up to 2-3 days and gently reheated on the hob or in the microwave.
