Quick Overview

  • Preparation Time: 10 minutes
  • Cooking Time: 18-20 minutes
  • Difficulty: Easy
  • Serves: 4

Ingredients

  • 10.6 oz (300g) short-cut pasta (e.g., ditalini, pipe rigate, conchigliette)
  • 1.8 oz (50g) unsalted butter
  • 1.4 oz (40g) plain flour
  • 21 fl oz (600ml) warm whole milk
  • 5.3 oz (150g) Fontina cheese, roughly grated
  • 1.8 oz (50g) Parmigiano Reggiano, grated
  • 1/2 tsp salt
  • A pinch of freshly ground black pepper
  • A pinch of nutmeg

Method

  1. Bring a large pot of generously salted water to a rolling boil.
  2. Whilst the water is heating, melt the butter in another heavy-bottomed saucepan over a medium heat. Add the plain flour and whisk vigorously for approximately 1 minute to create a golden roux.
  3. Gradually pour the warm milk into the roux, continuing to whisk to prevent any lumps. Bring the sauce to a gentle boil, then reduce the heat and simmer for 2-3 minutes until it thickens.
  4. Add the pasta to the boiling water and cook according to the package instructions until al dente.
  5. Turn off the heat under the sauce. Stir in the grated Fontina and Parmigiano Reggiano, mixing until the cheeses are completely melted and the sauce is smooth and stringy. Season with salt, pepper, and nutmeg.
  6. Drain the pasta, reserving a ladleful of the cooking water. Transfer the drained pasta directly into the saucepan with the cheese sauce. Stir well to combine thoroughly. If the sauce appears too thick, add a tablespoon of the reserved pasta cooking water.
  7. Serve immediately.

Serving & Leftovers
