Method

  1. Prepare Oven and Solid Bases (5 minutes): Preheat the oven to 200°C (approx 390°F / Gas Mark 6). Line a baking tray with parchment paper. Halve the cherry tomatoes, drizzle with a little olive oil, season with salt, pepper, and a pinch of oregano if desired. On the same tray or another, spread the drained and rinsed chickpeas, drizzled with olive oil and seasoned with paprika and cumin. Cut the bread into cubes, toss with olive oil and garlic powder, and add to the tray.   4. Check and Cool (3 minutes): Check the oven preparations. Once ready, remove the tomatoes, chickpeas, and croutons from the oven and allow them to cool completely at room temperature.
  5. Store: Transfer each preparation into separate airtight containers. The green sauce, pesto, and yoghurt dressing will keep in the fridge for 3-4 days. The marinated onions last for about a week. The roasted chickpeas and tomatoes for 3-4 days. The infused oil, stored in a dark place, for 1-2 weeks.
