- 5.3 oz (150g) precooked couscous
- 7 fl oz (200ml) boiling water
- 1/2 tsp fine salt
- 7 oz (200g) tinned chickpeas, drained and rinsed
- 5.3 oz (150g) cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/2 yellow or red bell pepper, diced
- 1.8 oz (50g) pitted black olives, sliced
- 2 tbsp extra virgin olive oil
- 1 tbsp fresh lemon juice
- 1/2 tsp dried oregano
- Freshly ground black pepper, to taste
Method
- Bring the water to a boil with the salt in a small saucepan. Pour the couscous into a bowl, add the boiling water and immediately cover with a lid or cling film. Allow to rest for 5 minutes.
- While the couscous is resting, prepare the other ingredients: drain and rinse the chickpeas. Halve the cherry tomatoes, dice the cucumber and bell pepper, and slice the olives.
