Ingredients

Method

  1. Slice each chicken breast horizontally to create two thinner cutlets, or cut into regular bite-sized pieces. Season the chicken all over with salt and pepper.
  2. Wash the lemon, finely grate its zest, and then squeeze its juice. Finely chop the fresh rosemary and garlic.
  3. Heat one tablespoon of olive oil in a large non-stick frying pan over a medium-high heat. Cook the chicken for 3-4 minutes per side, or until golden and completely cooked through. Remove the chicken from the pan and set aside.
  4. In the same pan, add the remaining tablespoon of olive oil. Add the courgette and carrot, cut into julienne strips or thin rounds. Sauté for 5-7 minutes, until tender-crisp.
  5. Stir the chopped garlic and rosemary into the vegetables and cook for 1 minute until the garlic is fragrant. Pour in the vegetable stock, lemon juice, and lemon zest. Bring to a gentle boil and simmer for 2 minutes, scraping the bottom of the pan to deglaze.
  6. Return the cooked chicken to the pan with the vegetables and lemon sauce. Gently toss to coat the chicken and vegetables. Taste and adjust seasoning with salt and pepper if needed.
