🍽 Dinner

Transform your weeknights with this satisfying and speedy creamy chicken macaroni. Featuring a delicate white chilli flavour, it’s a fuss-free meal ready in half an hour.

Creamy White Chilli Chicken Macaroni

This delightful dish marries the comforting embrace of macaroni cheese with tender chicken and an aromatic hint reminiscent of a white chilli, making it an ideal solution for those hectic weeknight evenings. Our methodology focuses on peak efficiency, utilising parallel cooking to minimise downtime, ensuring a complete and satisfying meal that’s ready in just 30 minutes. The key is to start the pasta water immediately while you prepare other elements. We’ll use pre-cooked chicken, or small diced chicken breast for swift cooking, sautéing it with an aromatic base. Directly in the same pan, we’ll build a rich, creamy, and cheesy sauce. Cannellini beans add texture and a significant protein boost, whilst a whisper of chilli delivers a subtle warmth. This recipe is designed to be straightforward and fuss-free, offering a delicious and nutritious meal without unnecessary steps.

Quick Overview

  • Preparation Time: 10 minutes
  • Cooking Time: 20 minutes
  • Difficulty: Easy
  • Serves: 4

Ingredients

  • 11.3 oz (320g) macaroni or ditalini
  • 10.6 oz (300g) chicken breast (or leftover roast chicken), diced
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 14.1 oz (400g) tinned cannellini beans, drained and rinsed
  • 8.5 fl oz (250ml) chicken (or vegetable) stock
  • 4 fl oz (120ml) fresh double cream
  • 5.3 oz (150g) Fontina cheese (or mild Provolone), grated
  • 1.8 oz (50g) Parmesan cheese, grated
  • 1/2 teaspoon mild chilli powder (or a pinch of fresh chopped chilli)
  • 2 tablespoons extra virgin olive oil
  • Salt and freshly ground black pepper, to taste
  • Fresh chopped parsley for garnishing (optional)

Method

  1. Bring a large pot of salted water to the boil for the pasta; cook the macaroni according to package instructions until al dente.
  2. While the pasta cooks, heat the olive oil in a large frying pan over a medium heat; add the onion and sauté for 3-4 minutes until translucent.
  3. Add the minced garlic and diced chicken; cook for 5-7 minutes, stirring occasionally, until the chicken is golden and cooked through (if using raw chicken).
  4. Stir in the cannellini beans, chicken stock, and chilli powder; bring to a gentle simmer, then reduce the heat and let it bubble gently for 3 minutes.
  5. Add the fresh cream and grated cheeses to the pan, stirring gently until the cheese has completely melted and the sauce is creamy.
  6. Drain the macaroni and transfer it directly to the pan with the chicken and cheese sauce; toss to combine all the ingredients.
  7. Taste and adjust seasoning with salt and pepper if needed; serve immediately, garnishing with fresh chopped parsley if desired.

Serving & Leftovers

Serve this dish hot, immediately after preparation, to best appreciate its creamy texture. Leftovers can be stored in an airtight container in the fridge for up to 2 days. To reheat, add a splash of milk or stock to restore the creamy consistency, warming gently over a low heat or in the microwave.
