Ingredients
- 7 oz (200g) chicken breast
- 4.2 oz (120g) precooked couscous
- 1 medium courgette
- 3.5 oz (100g) cherry tomatoes
- 1.7 oz (50g) pitted Taggiasca olives
- 1.7 oz (50g) fresh rocket
- 2 tbsp extra virgin olive oil
- 1/2 lemon (juice)
- 1 tsp dried oregano
- Fine salt and freshly ground black pepper to taste
Method
- Prepare the couscous: Bring 5.3 fl oz (150ml) of salted water to the boil. Pour the couscous into a bowl, add the boiling water, cover, and leave to rest for 5 minutes.
