Spiced Apple & Mascarpone Dessert Cups

The comforting aroma of autumnal bakes often evokes warmth and conviviality, yet the time to prepare them can be elusive. This recipe offers a swift solution to savour similar delightful flavours without lengthy waits. The key lies in beginning the apple cooking, allowing you to prepare the velvety mascarpone cream and crumble the biscuits whilst the apples cool slightly. It’s a beautifully layered dessert that expertly combines the sweetness of spiced apples with a rich, smooth cream and a delightful crunch from the biscuit base. An effortlessly elegant way to bring a touch of festive indulgence to your table in under half an hour, making wellness and efficiency a simple pleasure.

Quick Overview

  • Preparation Time: 15 minutes
  • Cooking Time: 10 minutes
  • Difficulty: Easy
  • Serves: 4

Ingredients

  • 2 medium apples (e.g., Golden Delicious or Fuji)
  • 7 oz (200g) mascarpone
  • 3.5 fl oz (100ml) double cream
  • 1.8 oz (50g) icing sugar (or fine caster sugar)
  • 2 tablespoons light brown sugar
  • 1.1 oz (30g) butter
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg (optional)
  • 1 teaspoon lemon juice
  • 2.8 oz (80g) digestive biscuits
  • Flaked almonds or chopped walnuts (for garnishing, optional)

Method

  1. Peel, core, and cut the apples into approximately 1cm cubes.
  2. In a non-stick frying pan, melt the butter over a medium heat. Add the apples, light brown sugar, ground cinnamon, nutmeg, and lemon juice. Cook for about 8-10 minutes, stirring occasionally, until the apples are tender but still slightly firm. Remove from the heat and allow to cool slightly.
  3. Meanwhile, in a chilled bowl, combine the mascarpone, double cream, and icing sugar. Whisk with electric beaters until you achieve a smooth and fluffy cream.
  4. Roughly crush the digestive biscuits with your hands or using a pestle.
  5. Assemble the cups: Distribute a first layer of crushed biscuits onto the bottom of four glasses or dessert cups. Add a layer of the slightly cooled spiced apples, followed by a generous layer of the mascarpone cream.
  6. Repeat the layers, finishing with the cream. Garnish with a few crushed biscuits and, if desired, flaked almonds or chopped walnuts.

Serving & Leftovers

Serve the cups immediately or after a short rest in the fridge to allow the flavours to meld. Any leftovers can be stored in the fridge, well-covered, for a maximum of 2 days, although the biscuit base may soften slightly over time.
