Ingredients

  • 4 large egg yolks
  • 2.1 oz (60g) granulated sugar
  • 2.8 fl oz (80ml) dry or semi-dry Marsala

Method

  1. Prepare your ingredients and set up a bain-marie. Bring a small amount of water to a gentle simmer in a saucepan, ensuring that the base of the bowl you intend to use for the zabaglione will not touch the water.
  2. In a heatproof bowl, preferably stainless steel or glass, combine the egg yolks with the granulated sugar. Begin whisking vigorously with either a hand whisk or an electric whisk.
  3. While continuing to whisk, gradually add the Marsala to the egg yolks and sugar mixture. The mixture should start to lighten in colour and slightly increase in volume.
  4. Carefully position the bowl over the simmering water (bain-marie), taking care that the bottom of the bowl does not make contact with the water.
  5. Continue to whisk without interruption for approximately 10-15 minutes. The mixture will progressively thicken, becoming frothy and pale, and should form a ribbon when you lift the whisk.
  6. Once the desired consistency is achieved, remove the bowl from the bain-marie and serve your delicious zabaglione immediately.

Serving & Leftovers

Serve the zabaglione warm, immediately after preparation, either on its own or alongside crisp biscuits such as ladyfingers or savoiardi, or with fresh berries or figs. This delicate dessert is best enjoyed freshly made and is not suitable for storing as its light, frothy texture will diminish.
