Method

  1. Preheat your oven to 200°C (400°F), using the grill or fan setting, or warm a non-stick frying pan over a medium-high heat. Lightly brush the bread slices with 1 tbsp of extra virgin olive oil.
  2. Toast the bread slices in the oven for about 5-7 minutes per side, or in the frying pan for 2-3 minutes per side, until golden. Once toasted, gently rub them with the halved garlic clove.
  3. While the bread toasts, prepare the first topping: wash and dice the cherry tomatoes into small cubes. Finely chop the red onion and basil. Combine the tomatoes, onion, and basil in a bowl, season with 1 tbsp of extra virgin olive oil, salt, and pepper, mixing well.
  4. For the second topping, finely chop the pitted black olives and rinsed capers. Transfer them to a small bowl and add 1 tbsp of extra virgin olive oil, mixing until you have a coarse paste.
  5. For the third topping, spread the Stracchino cheese (or ricotta) onto one side of a few toasted bread slices. Cut the cooked ham slices into strips or pieces, and arrange them over the cheese.
