Ingredients

  • 2 medium carrots
  • 2 celery sticks
  • 1 yellow pepper
  • 5.3 oz (150g) cherry tomatoes
  • 5.3 oz (150g) mini mozzarella balls
  • 1.8 oz (50g) pitted Taggiasche olives
  • 7 oz (200g) natural Greek yoghurt
  • 1/2 cucumber
  • 1 small garlic clove
  • A handful of fresh mint or dill
  • Extra virgin olive oil
  • Fine salt and freshly ground black pepper
  • 3.5 oz (100g) wholemeal crackers or croutons

Method

  1. Wash and prepare the carrots, celery, and pepper. Cut the carrots and celery into sticks, and the pepper into strips. Wash the cherry tomatoes and drain the mini mozzarella balls.
  2. For the yoghurt dip: Grate the half cucumber, then squeeze it well to remove excess water. Finely chop the small garlic clove and the mint (or dill) leaves. In a bowl, combine the Greek yoghurt, grated cucumber, garlic, mint, a drizzle of olive oil, salt, and pepper. Mix until you have a smooth dip.
  3. Arrange the cut vegetables, cherry tomatoes, mini mozzarella balls, and olives on a large serving platter or board. Create distinct sections for each ingredient for a harmonious visual effect.
  4. Pour the yoghurt dip into a small bowl and place it in the centre of the platter, or in an easily accessible corner.
