Lemon Chicken and Spinach: Quick and Flavourful

Facing a demanding evening with calm and confidence is simpler than you think with our Lemon Chicken and Spinach #308. This recipe has been crafted for efficiency in the kitchen, ensuring each step flows seamlessly into the next, with no wasted time or unnecessary waiting. The secret lies in quickly browning the chicken, then using the very same pan to create a flavourful side of wilted spinach and cherry tomatoes, all brought together with a fresh lemon sauce. It’s a ‘no-wait’ approach that allows you to bring a complete, nutritious meal to the table in under 30 minutes, perfect for any weekly meal plan that demands both taste and practicality.

Quick Overview

  • Preparation Time: 10 minutes
  • Cooking Time: 18 minutes
  • Difficulty: Easy
  • Serves: 2

Ingredients

  • 10.6-12.3 oz (300-350g) chicken breasts
  • 1 unwaxed lemon
  • 7 oz (200g) fresh spinach
  • 5.3 oz (150g) cherry tomatoes
  • 2 cloves garlic
  • 2 tbsp extra virgin olive oil
  • 2 fl oz (60ml) vegetable broth (or water)
  • Fine sea salt, to taste
  • Freshly ground black pepper, to taste

Method

  1. Cut each chicken breast in half horizontally to create 4 thinner fillets; season them with salt and pepper on both sides.
  2. Heat the olive oil in a large, non-stick frying pan over a medium-high heat; brown the chicken for 3-4 minutes per side until golden and fully cooked through. Remove from the pan and set aside.
  3. In the same pan, add the finely chopped garlic and cook for about 30 seconds until fragrant, being careful not to burn it.
  4. Add the halved cherry tomatoes and cook for 2-3 minutes until they begin to soften slightly.
  5. Stir in the fresh spinach, mixing until it wilts, which will take approximately 1-2 minutes.
  6. Pour the vegetable broth and the juice of half a lemon into the pan, allowing it to simmer for a minute to create a light sauce.
  7. Return the cooked chicken to the pan, gently turning it to coat with the sauce and vegetables; serve immediately, garnished with lemon slices and, if desired, a little grated zest.

Serving & Leftovers

Serve the lemon chicken and spinach hot, perhaps with some fresh bread to mop up the sauce. This dish is ideal as a complete meal. Any leftovers can be stored in an airtight container in the fridge for up to 2 days. We recommend reheating gently to maintain the chicken’s tenderness and the spinach’s freshness.
