  • 4 piadine or similar flatbreads
  • 10.6 oz (300g) fresh sausage, skins removed

  • 3.5 oz (100g) mozzarella, grated or finely diced
  • 2 tbsp extra virgin olive oil
  • Salt and black pepper to taste
  • Dried oregano to taste
  • A few fresh basil leaves to garnish (optional)

Method

  1. Heat 1 tbsp of olive oil in a large non-stick frying pan over a medium heat.
  2. Add the finely chopped onion and thinly sliced pepper, cooking for approximately 5-7 minutes until softened.
  3. Crumble in the sausage (skins removed) and brown well for 8-10 minutes, until golden and cooked through. Drain any excess fat if necessary.
  4. Stir in the tomato passata and a pinch of dried oregano, then season with salt and pepper. Simmer for 5 minutes, stirring occasionally.
  5. Meanwhile, heat the piadine one at a time in a clean, hot frying pan for about 1-2 minutes per side, until soft and lightly golden.
  6. Spoon the sausage and pepper filling onto one half of each warm piadina, sprinkle with mozzarella, and fold over into a half-moon shape.
  7. Serve immediately, garnished with fresh basil if desired.

Serving & Leftovers

These flatbreads are best enjoyed warm, straight after preparation, when the mozzarella is still wonderfully gooey. They are not suitable for long-term storage, but you can prepare the filling in advance and keep it in the fridge for 1-2 days. Reheat the filling thoroughly before assembling the flatbreads.
