Ingredients

  • 1/2 tsp ground turmeric
  • 1/2 tsp ground cumin
  • 1/2 tsp ground coriander
  • 14 oz (400g) tinned cannellini beans, rinsed and drained
  • 14 fl oz (400ml) unsweetened coconut milk
  • 7 fl oz (200ml) vegetable stock or water
  • Salt and freshly ground black pepper, to taste
  • Fresh coriander (or parsley), chopped, for garnish

Method

  1. In a large pan or casserole dish, heat the vegetable oil over a medium flame. Add the finely chopped onion and cook for 3-4 minutes until it turns translucent.
  2. Stir in the minced garlic, grated ginger, black mustard seeds, curry leaves (if using), and finely chopped chilli. Sauté for 1 minute, stirring constantly, until the mustard seeds begin to pop.
  3. Add the diced sweet potato cubes, ground turmeric, ground cumin, and ground coriander. Mix thoroughly to coat the sweet potatoes with the spices and cook for another 2 minutes.
  4. Pour in the drained cannellini beans, unsweetened coconut milk, and vegetable stock (or water). Bring to a gentle boil, then reduce the heat to its lowest setting, cover, and simmer for 10-12 minutes.
  5. Check the sweet potatoes: they should be tender but not falling apart. If needed, cook for a few more minutes. Season with salt and pepper to taste.
  6. Serve the stew hot, garnished with plenty of freshly chopped coriander. Accompany with basmati rice or naan bread, if desired.
