Quick Overview

  • Preparation Time: 10 minutes
  • Cooking Time: 20 minutes
  • Difficulty: Easy
  • Serves: 2

Ingredients

  • 2 large leeks (approx. 5 minutes to clean and chop)
  • 1 garlic clove, finely minced (1 minute to prepare)
  • 7.1 oz (200g) precooked lentils, drained and rinsed
  • 7.0 fl oz (200ml) hot vegetable broth
  • 1.8 oz (50g) fresh rocket
  • 3.5 oz (100g) natural Greek yoghurt or unsweetened plant-based yoghurt
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp dried thyme (or a fresh sprig)
  • Salt and freshly ground black pepper, to taste

Method

  1. Prepare ingredients: Clean the leeks by removing the darker green tops and roots, then slice them into thin rounds. Rinse them thoroughly under cold running water to remove any soil residue. Finely mince the garlic clove.
  2. Braise the leeks: In a large frying pan, heat the olive oil over a medium flame. Add the sliced leeks and minced garlic. Cook for approximately 7-8 minutes, stirring occasionally, until the leeks are tender and lightly golden.
  3. Add lentils and broth: Stir the precooked lentils and thyme into the leeks. Pour in the hot vegetable broth and bring to a gentle simmer. Reduce the heat and let it gently bubble for 10-12 minutes, or until the broth is almost completely absorbed and the lentils are well-flavoured.
  4. Finish the dish: Remove the pan from the heat. Gently fold in the fresh rocket until it has slightly wilted. Adjust the seasoning with salt and pepper to taste.
  5. Serve: Divide the leek and lentil mixture between plates. Garnish each portion with a generous spoonful of yoghurt. Serve immediately.
