Ingredients

  • 1 roll of fresh pizza dough (approx. 8.8-10.6 oz / 250-300g)
  • 5.3 oz (150g) cherry tomatoes
  • 1.8 oz (50g) pitted black olives
  • 2 sprigs fresh rosemary
  • 3 tbsp (approx. 1.5 fl oz / 45ml) extra virgin olive oil
  • Coarse sea salt, to taste

Method

  1. Preheat the oven to 200°C (400°F / Gas Mark 6). Line a baking tray with baking parchment.
  2. Unroll the pizza dough directly onto the prepared baking tray, gently stretching it with your hands to form a rectangular or oval shape.
  3. Using your fingertips, create small dimples all over the surface of the dough.
  4. Halve the cherry tomatoes. Distribute them evenly over the dough along with the olives.
  5. Brush the focaccia with the olive oil, then sprinkle with the roughly chopped rosemary leaves and a pinch of coarse sea salt.
  6. Bake for 18-20 minutes, or until the focaccia is golden brown and crisp at the edges.
