- 3.5 oz (100g) good quality dark chocolate (min. 70% cocoa), roughly chopped
- 4 fl oz (120ml) cold double cream (for whipping)
- 2 tbsp cold mascarpone
- 1 tbsp icing sugar (or to taste)
- 5.3 oz (150g) fresh raspberries
- Unsweetened cocoa powder for dusting (optional)
Method
- Melt the dark chocolate: In a heatproof bowl set over a pan of simmering water (bain-marie) or in the microwave (in 30-second bursts), melt the chopped dark chocolate until smooth. Allow it to cool slightly for about 5 minutes.
- Prepare the cream: While the chocolate is cooling, in a cold bowl, whisk the cold double cream with the icing sugar until semi-whipped. Gently fold in the cold mascarpone, mixing until you have a smooth, but not overly stiff, cream.
- Combine the ingredients: Pour the slightly cooled melted chocolate into the bowl with the cream and mascarpone mixture. Gently fold with a spatula, using an upward motion, until the mixture is well combined and has a uniform colour. Avoid overmixing to prevent deflating the cream.
- Assemble the pots: Distribute half of the fresh raspberries into the bottom of two serving pots or glasses. Cover with half of the chocolate mixture. Add another layer of raspberries and finish with the remaining chocolate mixture.
- Chill and serve: Place the pots in the refrigerator for at least 10 minutes to allow them to set slightly. Before serving, if desired, dust with a little unsweetened cocoa powder and decorate with a few fresh raspberries.
