Radiant Prawn and Citrus Salad with Avocado

Ingredients

  • 7 oz (200g) fresh or frozen prawns (shelled and deveined)
  • 1 large orange
  • ½ pink grapefruit (optional)
  • 1 ripe avocado
  • 3.5 oz (100g) fresh rocket
  • 1 fl oz (30ml) extra virgin olive oil
  • 0.5 fl oz (15ml) fresh lemon juice
  • Fine salt, to taste
  • Freshly ground black pepper, to taste
  • A few fresh mint leaves (for garnish, optional)

Method

  1. Begin by preparing the prawns: if frozen, rinse them under cold water to defrost quickly. Pat them thoroughly dry with kitchen paper.
  2. Heat a non-stick frying pan over a medium-high heat with a drizzle of extra virgin olive oil. Cook the prawns for 2-3 minutes per side, or until they turn pink and opaque. Remove from the heat and allow to cool slightly.
  3. While the prawns are cooking, prepare the citrus. Segment the orange and grapefruit by carefully peeling them ‘à vif’, removing all white pith and slicing between the membranes. Collect any released juice.
  4. Halve the avocado, remove the stone and peel. Slice the flesh into cubes or strips and immediately drizzle with the lemon juice to prevent discolouration.
  5. In a large bowl, combine the rocket, citrus segments, and avocado. Add the slightly cooled prawns.
  6. Dress the salad with the remaining extra virgin olive oil, salt, and pepper. Gently toss to combine all the ingredients.
  7. Serve immediately, garnishing with a few fresh mint leaves if desired, for an extra aromatic touch.

This salad is perfect as a light main course for lunch or dinner. It is best enjoyed fresh to fully appreciate the crispness of the rocket and the vibrant freshness of the citrus. This dish does not keep well, as the avocado tends to oxidise and the rocket can lose its texture quickly.
