Ingredients
- 2 slices of rustic bread or ciabatta (approx. 0.6 inches/1.5 cm thick)
- 1 medium ripe avocado
- 3.5 oz (100g) cherry or datterini tomatoes
- 3.5 oz (100g) buffalo stracciatella
- A few fresh basil leaves
- 1 fl oz (2 tbsp) extra virgin olive oil

- Freshly ground black pepper, to taste
Method
- To begin, slice the bread and toast it in a hot non-stick frying pan, on a griddle, or in a toaster for approximately 3-5 minutes, until golden and crisp on both sides.
- Meanwhile, halve the avocado, remove the stone, and scoop out the flesh. Mash the flesh with a fork in a bowl, seasoning with a pinch of salt and pepper.
- Wash and halve or quarter the cherry tomatoes, depending on their size.
- Gently drain the stracciatella from its preserving liquid.
- Once toasted, lightly rub each slice of bread with an avocado half for an extra touch of flavour, then generously spread with the prepared avocado mash.
- Distribute the chopped tomatoes over the avocado, then evenly arrange the stracciatella on top of the crostini.
